Pontefract cakes have a long history in England. Though they're called "cakes," they're actually soft, chewy, disk-shaped candies about the size of a quarter, packed with rich licorice flavor. They were first created as a medicine for stomach ailments and coughs. When sugar was added to them in 1760 they became immensely popular and a delightful new confection was born! Potefract cakes have inspired an annual festival, and even a poem entitled "The Licorice Fields at Pontefract" (by Sir John Bentjeman).
These extraordinary treats originated in Philadelphia a hundred years ago. They're not potatoes, and they're not really from Ireland, but they've become a favorite St. Patrick's Day treat because they look like mini-potatotes from Ireland. You'll love the creamy coconut flavor coated with cinnamon. Excellent to serve at a St. Patrick's Day party. Order your Irish Potato Candy here.
Fox's Glacier Dark Licorice and Anise candies have long been favorites in England. These hard candies combine the similar tastes of licorice and anise and are based on an old recipe for Army & Navy sweets. (Army & Navy is a traditional hard boiled, lozenge-shaped candy, flavored with licorice and herbs and used to soothe the throat.) Fox’s Glacier Dark are equally delicious, rich in taste, hard, and long-lasting.
Here's a great idea for Mardi Gras, or anytime: Create an edible necklace out of Black Licorice Laces and Old Fashioned Snaps, both available from Licorice International.
Each section of Black Licorice Laces is just the correct length for a necklace, and the Snaps work perfectly for beads.
When you've finished stringing the Snaps on the Laces, simply tie the two ends together with a simple knot, just as you would with a balloon. Reinforce with another knot. Pull the ends tight, but be careful not to tear the Laces.
Then get ready to enjoy Mardi Gras!
