Licorice Tasting Guide Available

Click here for a guide to help you navigate through the various tastes and textures of licorice from around the world.

What's the difference between red and black licorice, besides color?

This article appeared on Boston.com on August 29, 2011 and was written by Northeastern University physicist John Swain. E-mail questions to drknowledge@globe.com or write to Dr. Knowledge, c/o The Boston Globe, PO Box 55819, Boston, MA 02205-5819.

Real licorice, which is in black licorice candy, is made from the roots of the licorice plant, which can also be spelled liquorice.

Red licorice isn’t really licorice at all, except in name. It’s just a red candy, which can be made with many different flavorings, including strawberry, cherry, raspberry, and cinnamon.

Despite similarities in taste, licorice is not related to anise or fennel.

American, Chinese, and European varieties of the licorice plant are all slightly different but have many similarities.

Each variety is a legume. Each produces a compound in its roots called anethole, which gives black licorice its distinctive flavor. Each also produces a compound called glycyrrhizin, a substance that is 30 to 50 times sweeter than sugar.

Glycyrrhizin can have negative physiological effects, including raising blood pressure and causing water retention, so it’s a good idea to exercise some care in eating licorice, especially people with heart problems, who might want to consider having a chat with a doctor if they eat a lot of it.

Licorice root, which can be chewed for its taste and sweetness, is an integral part of Chinese cuisine and traditional Chinese medicine.

If you are fond of licorice candies, you might want to be aware that the ingredients used to make them can vary. European candies, for example, often are flavored with aniseed oil and may contain very little substance from licorice plants.

Licorice Is Always in Fashion

Fabric-Free-Fashion-at-dk3-X2
Eduardo Torres created this stunning dress using nine pounds of shoestring licorice.

Did you guess that the dress above was made out of licorice?!?!?!  Susan Lazear, Professor of Fashion at San Diego's Mesa College and founder of Cochemille Design challenged a group of designers to "use things we look at every day but don't see as fashion."

According to Visions Art Musuem, Summer 2011, designer Eduardo Torres, responded to the challenge to use nontraditional materials, by selecting black string licoirce. He conducted numerous searches on the internet and rejected idea after idea because it had been done. He used nine pounds of licorice in the creation of this dress.

Whether you want to wear it or eat it, you can buy shoestring licorice in red and black at Licorice International

Special thanks to Nancy Davenport who shared this story with us.

Licorice and Other Treats for Easter

Tired of the "same old-same old" in your Easter basket? This year, let the Easter bunny bring a surprise: Licorice and other treats from Licorice International.

In order to receive your candy in time for Easter, please order by noon on Monday, April 18th.

You can fill the basket with your favorite licorice, but keeping with the Easter theme: we especially recommend the following:

Sour Stars: Kids love sour things. There's something thrilling about biting into a sugar-coated sour candy. Sour stars are a big hit with kids, plus the bright colors remind you of spring flowers and new life. They're gluten free too.

Mini Pastels: These pretty little candies are the perfect Easter treat for a licorice lover. Mini pastels have a sweet candy coating over a delicate licorice. They look great in an Easter egg or in a bowl or basket.

Ultimate Licorice Jelly Beans: Do you always pick out the black jelly beans? Save yourself the trouble and buy these pectin licorice jelly beans. We all agree that the black ones are the best, so why other with the others? These special jelly beans are made by Gimbals and are Kosher, nut free, transfat free, gelatin free, gluten free, dairy free, and egg free. Plus they taste terrific. No wonder they're the Ultimate Licorice Jelly Beans.

What Kind of People Like Black Licorice? Red Licorice?

Do you prefer black licorice or red licorice? Have you ever wondered what that says about your personality?

According to a survey done by the American Licorice Company, people who prefer red licorice see themselves as sensible, practical, and down-to-earth. They tend to be more pragmatic and conservative, and they like to have things planned as opposed to leaving things to chance.

Black licorice fans consider themselves more wild and crazy. They like spontaneity and the thrill of adventure and are more likely to be outspoken, freely share their opinions with others and often fell as though they're going a million miles an hour.

What do you think? Does your personality match the kind of licorice you prefer?  You can take the survey here.

Two Classy Chics Review and Give Away Red Licorice from Licorice International

Chris, a product review blogger, recently reviewed red licorice from Licorice International for the blog, "Two Classy Chics." Although she isn't a fan of black licorice, one of her favorite candies is red licorice. It took her a long time to do the review because it took her forever to choose which kind of licorice to review. (With over 160 varieties from 12 countries, it's easy to see why.)

She finally settled on the following:
Red Licorice Sampler (which includes Kookaburra Strawberry and Raspberry Twists from Australia, Cherry Chews and Red Scotties from the United States).

She's offering a chance to win a $25 gift certificate to Licorice International.

Free Pontefract Cakes with Every Order

Pontefract cakes have a long history in England. Though they're called "cakes," they're actually soft, chewy, disk-shaped candies about the size of a quarter, packed with rich licorice flavor. They were first created as a medicine for stomach ailments and coughs. When sugar was added to them in 1760 they became immensely popular and a delightful new confection was born!  Potefract cakes have inspired an annual festival, and even a poem entitled "The Licorice Fields at Pontefract" (by Sir John Bentjeman).

Now you can taste Pontefract Cakes for free. Place an order of any size at Licorice International by March 31st and you'll receive a FREE sample package of Pontefract Cakes from England.

Edible Necklace for Mardi Gras or Just for Fun

Here's a great idea for Mardi Gras, or anytime: Create an edible necklace out of Black Licorice Laces and Old Fashioned Snaps, both available from Licorice International.

Each section of Black Licorice Laces is just the correct length for a necklace, and the Snaps work perfectly for beads.

Simply string the Snaps on a piece of Black Licorice Lace just as you would a necklace. If the licorice doesn't fit in a Snap, simply make the hole bigger by inserting a skewer and/or squeezing the Snap between your fingers. You can put the beads on using a pattern, as I did in my example, or use random colors. You may want to personalize it by adding colored miniature marshmallows or ring-shaped cereal or candy.

When you've finished stringing the Snaps on the Laces, simply tie the two ends together with a simple knot, just as you would with a balloon. Reinforce with another knot. Pull the ends tight, but be careful not to tear the Laces.

Then get ready to enjoy Mardi Gras!

Dear Licorice Ladies,
I want to thank you for taking the time to send some licorice to my soldiers here in Afghanistan. As you can see the licorice brought a smile to every soldiers face that received the licorice. You ladies are great Americans who support and remember that daily our soldiers sacrifice their lives, bodies, and time with their families to keep our borders safe and secure. These particular soldiers that you see in the pictures are doctors, nurses, or medics that care for the wounded soldiers at our Forward Surgical Support hospital. They will work for hours on end to ensure that the wounded are take care of and that they receive the best care possible. God bless each and every one of you who contributed to sending the licorice and most importantly letting the soldiers know that Americans love them enough to take time out of their day to support them.
